Grill'it Fajitas

Ingredients:

3 1/2 lbs boneless chicken breasts, cut into strips

4-5 bell peppers, cut into strips (green, red, yellow, orange)

2 large onions, cut into strips

8 oz of sliced mushrooms

4  pkgs. fajita seasoning mix

Flour tortillas

1 cup vegetable oil

Mix  fajita seasoning mix with 1 cup vegetable oil and 2 cups water. Place chicken and marinade in large plastic bag and shake to coat. Refrigerate chicken for at least 30 minutes.

Heat small Grill'it on medium heat. Add marinated chicken and cook until no longer pink.  Add vegetables and cook until crisp/tender, stirring frequently.

Heat tortillas in Dutch oven or Grill'it until warm. Place fajita mixture in tortilla. Add toppings (sour cream, guacamole, cheese, lettuce, etc) as desired.

Serves approximately 12 (2 fajitas each).

Cooking Tips...

The Grill'it is ideal for making your entire breakfast feast, but it is certainly not the only meal you can cook. The Grill'it is also great for hamburgers, fish, sautéed vegetables, stir fry, and many other favorites.

(Small Grill'it and Fire Stand pictured)

All of our Grillits are baked at 500 degrees and coated with bacon grease. Although they look like they are Teflon coated, they are  cured.  Metal  utensils will not harm the cooking surface.

The versatility of the Prospector Grill'it eliminates the need for three or four pans.

Clean Up and Care...

The Grill'it is also easy to clean.  Just add water when your finished cooking.  You can either boil it out as you  would a Dutch Oven, or simply let it soak for a few minutes and with it's slick surface it will easily wipe clean. If little or no water is available, just scrape away the remaining food and wipe it down with a rag saturated with cooking oil or shortening. You may use salt as an abrasive.  Never use soap. This will take away the seasoning.

The Grill'it is constructed of steel; do not leave out in weather, as it may rust. You should always keep the Grill'it oiled.
